Tiger nutsedge: a forgotten treasure with many benefits
Yellow nutsedge, also known as tiger nut or chufa, is a small tuber native to Africa and Spain. Long cultivated and consumed in Europe, it was supplanted by other crops over time. Today, however, Tiger Nuts are making a comeback on the culinary and nutritional scene for their many benefits.

A concentrate of nutrients
It's a veritable mine of essential nutrients. Rich in fiber, it promotes satiety, intestinal transit regulation and digestive well-being. It's also a source of vegetable protein, vitamins E and C, potassium, magnesium and phosphorus. What's more, its unsaturated fatty acid content is beneficial to cardiovascular health.
An asset for your health
Yellow nutsedge has many properties that make it an asset to your health. Its antioxidant properties protect cells against damage caused by free radicals. Its anti-inflammatory properties can help reduce the risk of chronic diseases. Its low glycemic index makes it a suitable food for diabetics or people monitoring their blood sugar levels.
An ally for healthy, conscious eating
Yellow nutsedge is an easy addition to a healthy, conscious diet. Its mild, slightly sweet flavor is a perfect match for many recipes. It can be eaten raw, roasted, powdered or in milk. It's perfect for salads, smoothies, desserts or stews.
Recipe: Soft tiger nut and chocolate chip cookies
Ingredients:
- 350 g tiger nut flour
- 125 g blond sugar
- 125 g wholemeal sugar
- 1 pinch vanilla powder
- 1 g edible baking soda
- 15 cl tiger nut milk (or oat, almond or soy milk)
- 15 cl neutral cooking oil (grapeseed, sunflower, deodorized...)
- 200 g dark chocolate 70% cocoa (this can also be a mixture of 100 g chocolate and 60 g walnut kernels)
Preparation:
- Preheat oven to 200°C.
- Chop the chocolate with a knife.
- Pour the flour, sugars, vanilla, baking soda and a pinch of salt into a mixing bowl. Mix with a wooden spoon. Add the liquids and mix again. Spoon in the chocolate again.
- Shape into 12 balls and place spaced out on a baking sheet. Flatten slightly with a spatula.
- Place in the oven for 12 minutes at 200 degrees (10 minutes for small ones), with the heat turned up. This may vary from one oven to another: the edges should be slightly golden and the rest blond.
- Leave to cool when removed from the oven.
